You should consider eating much more protein...30% if you can. And don't be scared of fat...3% is WAY too low. Everyone knows these days that the fat your body produces is largely created by the carbs you eat. Low calories is a great idea, but when 80% of your food is carbs, you will never lose the weight. Remember, most of the important stuff in your body (organs, tissue) is structurally made of protein...you need more. I would switch out 2 of your 5 potatoes for a chicken breast, fish filet, or vegetarian protein. Nuts and beans can also supplement your protein. In fact, I wouldn't eat potatoes more than twice a week if you are serious about weight loss. Good luck!

P.S. My favorite high protein food is cottage cheese. Unlike real cheese, it is very low in fat. The low fat (1.5%)cottage cheese I get has 1.5g fat, 4g carbs, and a whopping 14g of protein per serving. It's a great way to tip the balance of protein to carbs in your favor!
Another pure protein option are egg whites...get rid of the cholesterol in the yolks!

I'm finding this complicated. To get myself to eat breakfast, I need something that's all ready....nothing more than a microwave involved. So, perhaps something I could make ahead, then freeze in single portions?
This needs to be simple, or I won't do it. I don't know what to eat!

Also, it's clear that I need to find some help with the thyroid problem (I don't have one). Another quest to find the rare doctor who knows the information needed to help me. I have a few leads. This could potentially help me alot in many ways, or be another disappointment.

My friend is having gastric bypass in a couple of weeks. I am moving in a couple of weeks. When I'm settled, and he's sufficiently recouperated, we're joining the YMCA and going together. I need to rebuild all the muscle mass I lost to Graves Disease, and then some: We're going to get ripped, stacked and built.
I have actually enjoyed that kind of exercise quest, in the past. For cardio, they have exercise bikes there. I also find gloving up and punching a bag good, esp when angry.
There's also my personal trainer, Honeybear. He can walk forever.....my knee is a problem now, though.

I'm not ready to lay down my sword yet. I'm going to fight the good fight until the end. I live by that: It's my celtic warrior woman code.
